Krume Bäcker is a modern bakery in Panama that uniquely combines Austrian tradition with local building techniques, a sustainable approach and contemporary design. The renowned Panamanian studio Mallol Arquitectos, which has been redefining the standards of architecture in Latin America for years, is responsible for the project.
Tradition and modernity in harmony with the surroundings
The interior of the Krume Bäcker bakery reflects the brand’s philosophy of simplicity, quality and respect for heritage. The centrepiece of the space are the walls and the counter made from rammed earth, a construction technique characteristic of traditional Panamanian craftsmanship. This material, which is locally sourced and not industrially processed, not only gives the interior a raw feel, but also provides natural thermal and acoustic insulation. Significantly, the entire construction process was carried out in collaboration with local artisans, which further reinforces the cultural value of the project.
Sustainable furniture made from reclaimed wood
Complementing the natural walls is original furniture designed by Mallol Lifestyle Studio. All the furniture – from tables to chairs – was made from wood harvested from the bottom of Lake Bayano, one of Panama’s largest bodies of water. This wood, which was submerged decades ago, is an extremely sustainable and ecological raw material that is harvested without harming the environment. The process is carried out in collaboration with the Guna Madugandí community and uses biodegradable oils and kiln-drying for up to 2.5 months.
A well-thought-out space with the community in mind
The interior layout of the bakery has been designed to be conducive to both quick visits and longer meetings over a meal. Open passageways facilitate movement, and carefully placed seating accommodates the needs of both individuals and groups. This is complemented by lighting designed to highlight the most important element – the freshly baked bread. The ambience of the interior is based on a neutral colour palette that alludes to the baking process – from the flour to the dough to the crisp crust of the bread.
Sustainability in design
The Krume Bäcker project is an example of a conscious approach to architecture. The use of natural, local materials helped to significantly reduce the carbon footprint. The Aparato A team, responsible for making the elements from earth, developed mixtures based on the properties of the soil, which ensured the durability and functionality of the structure. All work was carried out by local teams, which translated into knowledge transfer and community activation.
Architecture that transforms social space
Krume Bäcker is not just a bakery – it is a space that integrates the local community, a place for meeting and exchange. The project proves that good design can go hand in hand with care for the environment and respect for local heritage.
The studio Mallol Arquitectos is responsible for the realisation, which, thanks to its in-house R&D department Mallol FWD, is constantly innovating and implementing innovative design methods. The company’s activities cover a variety of typologies – from residential to commercial to institutional spaces – always in the spirit of sustainability and urban responsibility.
