The Old Brewery in Toruń will be revived. The long-awaited modernisation of the brick buildings and neighbouring tenement houses in the New Town is underway. The historic buildings on Browarna and Piernikarska Streets will be transformed into a Hilton Garden Inn hotel, which is scheduled to open in early 2028.
Stary Browar in Toruń – a comeback after many years
The Old Brewery in Toruń remained forgotten for many years and suffered progressive degradation. This happened despite numerous announcements of changes and the presentation of successive concepts for the rescue of the historic complex. It was only when ARD Garbary acquired the property in December 2024 that plans could be turned into real action. Construction work began in the summer of 2025, ending a period of speculation surrounding one of the most neglected buildings in Toruń’s New Town.

The Hilton Garden Inn hotel construction project involves the adaptation, reconstruction and superstructure of six historic buildings within Piernikowa and Browarna Streets. Once the work is completed, they will form a complex with an area of over 6,800 sq m. The restored façades will retain their original appearance, while contemporary glazing will bring more light into the complex. According to the investor, the architects opted for solutions that integrate the hotel with the neighbouring buildings without dominating the historic surroundings.

The walls of the former brewery will house 132 rooms and suites designed for business guests and tourists. The offer will be complemented by an extensive recreation area with a swimming pool, gym and spa facilities, as well as a restaurant and bar also available to residents. An underground car park is planned under the building, which is intended to reduce parking pressure in this part of Toruń’s New Town and organise traffic in the immediate vicinity of the development.

Stary Browar and its history
The Old Brewery in Toruń was established at the end of the 19th century on the initiative of entrepreneur Theodor Sponnagel. The facility was located in two late Gothic granaries, previously rebuilt in the 17th and 18th centuries. The following years of the brewery’s operation were a period of modernisation and expansion, including the construction of a four-storey building in 1874 and the installation of steam engines at the end of the 19th century. The brewery operated as a private enterprise until the outbreak of World War II. After the war, the buildings ceased to serve their previous function and became warehouses. After 1995, clubs, discos, restaurants and offices were opened within the brick walls. In 2018, the entire complex was entered in the register of monuments.
The return of the monument to the city space
The investment is being carried out in close cooperation between the investor and municipal institutions, including the conservator of monuments, architecture departments and the Business Support Centre. Such extensive coordination is intended to facilitate the work in a demanding, historical environment. The ongoing work will bring the new Stary Browar and its surroundings back to life after many years of neglect. The opening of the Hilton Garden Inn is planned for early 2028.
