Popolare. A new pizzeria on the gastronomic map of Warsaw!

Popolare pizzeria e pasta is the latest restaurant concept by Karol Szafraniec and Bartosz Serdakowski Goldstein,whoare known for their many gastronomicprojectsin Warsaw, such as Bocce, Paradiso or Zachodni Brzeg .It might seem that there is an overabundance of establishments serving pizza in Warsaw.This makes it all the more important to stand out with somethingspecial when opening a new restaurant. To achieve this goal, the owners invited the Sojka&Wojciechowski studio, who specialise in interiors dedicated to gastronomy (but not only). We have written about Sojka&Wojciechowski on the website more than once. More examples of their work can be found at the bottom of the article.

Theowners of Popolare pizzeria e pasta entrusted the design of their latest establishment to the Sojka&Wojciechowski studio, known for itsdesigns of, among others,Washington Cafe, The Tailor’s Wife, Love Praga orBarPrasowy and Gdański. The designers focused on playing with form.Thethick structural plaster on the walls evokes memories of the scorched walls ofItalian villages under themidday sun.Additionally, covered with graphics by Karolina Lubaszko, it became the leitmotif of the premises.

“We wanted to capture the cheerful, holiday mood withwhich we residents of thecloudy north associate Italy, hence the pastel, bright colours used in the finishing elements. Upholsteryelements, table tops, furniture and thecrown of the bar,whichtowersovereverything, have been designed in such a way as to create the right atmosphere,”says Maciek Granecki, one of thedesigners from S&W. This iscomplemented by lighting and numerous neon signs designed by theproject‘sauthors.

Of course, apart from the interior, thekitchen, for which Michal Kaczmarczyk is responsible, isequally important. Popolare serves above all theRoman pizza, probably already forgottenbysome, on thin and crispy dough. Long fermentation, minimal yeast and high hydration ensure that it is lighter and easier to digest. The chefs use 5 stagioni superiore flour, unfiltered Grezzona Anfora oil andSan Marzanotomatoesfrom Campania.

Alongside Roman pizzas, pastas are key on Popolare’s menu. Thestarring role is pasta fresca, which is fresh pasta made from the highest quality durum wheat, which comes accompanied by fresh meats,seafood and aromatic herbs and vegetables. Thereisalso awideselection of starters prepared according to Italian recipes. Such carefully designed premises,both in terms of the interior and the menu, show how much the catering market in Warsaw has changed (for the better) in recent years.

About the studio:
Sojka & Wojciechowski – we founded our studio in 2004, while we were still students at the Faculty of Interior Design of the Warsaw Academy of Fine Arts. We started by designing small functional forms and interior designs for magazines. To date, together we have designed more than 100 interiors – private and public: from a 30-square-metre studio to a 600-square-metre sports club in the centre of Warsaw.

Despite the passage of time, we like to call ourselves a young design studio. Over and over again, we draw inspiration from the city we live in by traversing it on a scooter, skateboard or motorbike.
